Buffalo Chicken Bites





I made this tasty appetizer last night and I have to say they are well worth the effort and definitely received rave reviews!! It's like Buffalo Chicken Wings without the bones. Serve the bites with toothpicks, celery sticks and Ranch dip. It is a great make ahead appetizer as you can cook the chicken early in the day and then just before serving, toss the chicken in the sauce and bake them up. Yum!

Ingredients

For the Chicken Bites


1 c All-purpose flour
1 tbsp Cornstarch
1 tsp Salt
12 oz Beer or 355 mls (about one bottle)
2 lb boneless Chicken Breast, cut into cubes

For the Buffalo Sauce

½ Cup butter
¾ Cup Cayenne pepper sauce (Frank’s Red Hot Sauce)
3 to 4 dashes Hot Sauce


Directions

1. Heat 2-3 inches of oil in a heavy pot over medium-high heat to at least 350 degrees. Also preheat your oven to 400 degrees if serving chicken right away.

2. Meanwhile, combine the flour, cornstarch, and salt in a medium bowl. Whisk in the beer, adding a little at a time until the batter is somewhat thin, but still thick enough to coat the chicken. (I found I had to add a little more flour to thicken up the mixture).

3. Add a few pieces of chicken to the batter and toss them around and then drop the pieces into the hot oil.

4. Fry the chicken in batches until it's a deep golden brown, around 3 to 4 minutes. Remove to a paper towel-lined pan to drain. I fried the chicken in four batches.

5. To make the sauce, combine the butter, cayenne pepper sauce, hot sauce in a saucepan over medium heat. Melt it together, whisking to combine. Or use the microwave that's what I did!

6. Transfer the chicken to a large bowl and pour on the sauce, toss the chicken to coat.

7. Transfer the coated chicken onto the pan lined with tin foil greased with vegetable oil and bake until the chicken crisps up, approximately 20-30 minutes. Serve them with toothpicks sliced celery and Ranch dip.

You can make this recipe ahead of time by cooking the chicken up to step 5. Then right before serving complete steps 6 and 7.

Combine flour, cornstarch and salt.

Cut chicken into bite size pieces.

Add beer and mix with a wire whisk. Add more flour if necessary to thicken the sauce.

Add chicken pieces to the flour mixture.

Fry chicken in hot oil. until golden brown.

Remove chicken onto a paper towel lined baking sheet.
Combine butter, cayenne sauce and Tabasco sauce. Heat in microwave or in a pot on stove top. 

Place chicken in a large bowl. Pour sauce over top of the chicken and toss to coat.

Place chicken on a baking sheet greased with vegetable oil and bake in 400 degree oven until the chicken is nice and crispy and caramelized. Poke chicken with a toothpick to serve.
