Lobster Mac & Cheese








I love Mac & Cheese and so adding something else that I love just takes it to a whole new level!

Ingredients:

3 ½ Cups uncooked elbow macaroni
Kosher salt and 2 Tablespoons vegetable oil for pasta water.

1 litre or quart of milk
8 Tablespoons butter, divided, 6 T for sauce and 2T for bread crumb mixture
½ Cup all-purpose flour
4 Cups grated Gruyere cheese
2 Cups grated old cheddar cheese
½ teaspoon pepper
3 Cups chopped cooked lobster meat
1 ½ cups fresh bread crumbs

Add oil and salt to a large pot of boiling water. Add pasta. Cook until al dente. Drain well.

Heat milk in microwave, but not boiling.
In a large pot melt 6 tablespoons of butter, add flour. Cook over low heat for about two minutes. Stirring constantly with a whisk.
While whisking add milk, cook for about 2 more minutes, until thick and smooth.
Remove from heat. Stir in cheese and salt and pepper.
Stir in pasta and lobster.
Pour into a greased 9x13 inch pan. or individual gratin dishes.
Melt last 2 tablespoons of butter, add bread crumbs. Sprinkle on top of macaroni. Bake in 375 degree oven for about 20-30 minutes until sauce is bubbly and the bread crumbs are golden.

When I make this dish for company I often divide the macaroni between two pans. Making one just macaroni and cheese and the other lobster mac & cheese as some people in my family do not like lobster. Simply reduce the lobster by half.

Melt butter in a large pot.

Whist in flour.
Cook for two minutes while whisking constantly.

Stir in warm milk. Whisking until thick and smooth, about 2 minutes.

Stir in cheeses and salt and pepper. Remove from heat.

Stir pasta and lobster into macaroni. In this picture I divided the macaroni and cheese mixture between two pans and added lobster to only one pan.



Mix butter with bread crumbs and sprinkle over macaroni. Bake for about twenty minutes or until crumbs are golden.
