Pierogi Lasagna

I seen this recipe on one of those Facebook Video's and made a few adjustments. Great for a side dish for a large crowd or also can be served as a main course with a salad.


8 potatoes, peeled and cubed
1/2 cup cream or milk
1/2 cup butter
salt to taste
4 onions, chopped
6-8 lasagna noodles
2 -3 cups shredded cheddar cheese
1/2 pound (250 grams) bacon, diced
1 bunch of green onions, finely chopped
salt and pepper to taste
sour cream and fresh chives for garnish

Preheat oven to 350 degrees F.

Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.

Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat, add chopped onions and sauté until soft.

Sauté the bacon, until the bacon is fully cooked. Chopped into bits.

Cook the lasagna noodles according to package directions or until al dente and cool under running water.

Layer in a 9×13 in pan: lasagna noodles, mashed potatoes, sautéed onions and cheddar cheese, bacon bits and green onions. Salt and pepper to taste. Make 2 layers.
Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.

Mash potatoes and set aside


Slice up four onions 
Slice up one bunch of green onions or chives


Grate 2-3 cups of sharp cheddar cheese
Saute the onions until they are soft



In a 9 X 13 lightly greased casserole dish layer lasagna noodles 


mashed potatoes


Sauteed onions


Cheddar cheese, bacon bits and green onion 


Repeat the second layer in same order and bake in a 350 degree oven for 35-45 minutes.
